8 drumsticks
1 tbsp salt
4 tbsp tandoori powder
1/4 cup Ladies Choice Real Mayonnaise
3 tbsp plain yogurt
Rice
2 cups basmati rice
1/4 cup coriander leaves, chopped finely
2 tbsp Planta margarine
1 tbsp salt
(Cook in the rice cooker)
Cucumber relish
1 cucumber, remove seeds, dice
1/4 cup mayonnaise
1 tbsp lime juice
Salt and pepper to taste
(Mixed together and chill in the fridge)
Method:
- Make slits on chicken drumsticks and rub salt on it.
- Combine tandoori powder with yogurt and mayonnaise and marinate chicken with it for at least 4 hours.
- Line a large baking tray with foil and a wire rack on top. Grease the wire rack with oil. Place chicken on wire rack and roast for 25 to 30 minutes or until juices runs clear when thickest part is pierced with a skewer.
- Serve chicken with fragrant rice and cucumber relish.
